Green Tomato Mincemeat ……….C.H. Kitson
8lbs. green tomatoes
4lbs. green apples
1lb currants ( omit currants and increase raisins)
4lbs brown sugar
The rind of 2 lemons and 2 oranges
1 cup vinegar, white or cider
2 tsp cinnamon
1 tsp cloves
1 tsp Nutmeg
Chop or mince tomatoes, scald, and drain 3 times.
Mince apples, lemons, and orange rinds and combine with tomatoes.
Cook for about 45 mins.
Add spices and vinegar, and blend.
Fill jars and process 15 mins.
Yield – about 11 lbs. (16 oz jars)
