Fish Croquettes

Robin Hood Cookbook, Recipes by Mrs. Porter, 1915

1 pint cold cooked salmon or other fish
1/2 pint milk
1/2 cup soft bread crumbs
2 Tbsp butter
3 Tbsp flour
1 Tbsp chopped parsley
1 tsp salt
Dash cayenne
Egg, beaten with a Tbsp of water
Cracker crumbs
Oil for frying

1. Rub butter and flour together and add milk.
2. Stir over the fire until you have a thick smooth paste.
3. Remove from fire and add bread crumbs and seasonings.
4. Add fish and mix carefully.
5. Chill until cold.
6. Form into 4 inch long cylinders.
7. Roll in egg mixture, then in cracker crumbs.
8. Fry in oil until browned.
9. Serve on a napkin garnished with parsley.
